My family is Italian so I grew up eating lots of Italian foods and this salad is a simple, classic dish. My mom always served it with fresh slices of tomato and mozzarella, it was the only way I would eat tomatoes! This appetizer is a fun twist on the classic salad; bite size and easy to eat. These take a little bit of time to make but will be a hit at your next event.
Mozzarella (I get the pearls)
Basil (leaves or chopped)
Cut the top off of each tomato and scoop out the middle (this is the time consuming part).
Fill each tomato with mozzarella and a basil leaf (if you are using the whole leaf)
Place your tomatoes on a dish and drizzle balsamic vinegar and EVOO.
If you are using chopped basil, sprinkle on top of your tomatoes.
